Egg Recipes

Breakfast Burritos

Fill corn tortillas with scrambled eggs, turkey bacon or turkey sausage and veggies. Roll up and wrap in parchment paper and store in fridge or freezer. Reheat for a quick on-the-go breakfast.

California Omelette

Fold thinly sliced avocado inside all-egg omelette and add a dollop of plain greek yogurt.

Egg Muffins

In bowl, whisk 8-10 eggs with 1/4 – 1/2 cup unsweetened almond milk. Fill silicone muffin cups and place on baking sheet. Add toppings (turkey bacon, veggies, cheese, etc. Bake 350 degrees for 25-30 minutes or until muffins “lift” from silicone pan.

Scrambled, SunnySide, Poached, Hard Boiled, etc.

An easy way to start the day with protein. Be sure to include veggies! 

Huevos Rancheros

Toast one corn tortilla, cook one egg and place on top of tortilla. Top egg with fresh salsa, tomato, avocado, beans, and any additional vegetable toppings.

Frittata

Preheat oven to 400 degrees. Sauté onion in coconut oil in oven-safe skillet. Add chopped veggies, turkey bacon or turkey sausage crumbles. Remove from heat and spread in even layer in pan. Pour over approximately 8 whisked eggs. Season top and place in oven for 20-25 minutes or until eggs are set.
